Soo surprise! We’re doing a special feature counting down the days until Christmas. The idea is simple, 8 days left until Christmas, so we’ll be posting a recipe every day until then and each recipe will feature only 8 ingredients or less! Fun right? Some minor stipulations, things that don’t count as ingredients are salt, pepper, and water. Everyone pretty much has those in their kitchen and salt and pepper go in most recipes! But we’re featuring recipes that you can make for holiday parties, family gatherings, or are just festive colored! So stay tuned because LOTS of recipes will be posted the next eight days!
We’re starting with this yummy apple beet salad with candied pecans. Not only is it super simple, but it’s healthy too! There is something magical about that beet, feta, apple combination. Not to mention the amazing maple pecans! The hardest part of this recipe is waiting for the pecans to cool (and not eating all of them in the interim!). As a bonus, it’s also red and green colored too! So let’s get cooking!
- 1 T of butter
- 1 cup pecans
- 2 T 100% pure maple syrup
- 1 – 5oz container of mixed greens
- 1 large or two small Granny Smith Apples (the ones I got a the store were super tiny!)
- 1 cup of chopped pickled beets
- 1/2 cup of crumbled feta
- 1/3 cup of your favorite balsamic dressing
- Salt to taste for pecans
To start, melt butter in pan on medium-high heat. Once melted, add pecans, sprinkle with a pinch of salt, and cook until fragrant. In the last minute of cooking add the maple syrup and stir pecans until evenly coated. Maple syrup should reduce and absorb into pecans (this takes about a minute or two). Remove from heat and set aside to cool. To assemble salad, place greens in large dish. Chop apples and beets. Arrange on salad. Sprinkle with feta. Once pecans are cooled, place top of salad. Drizzle dressing over salad and toss to combine. Serve immediately and enjoy!
