It’s that time again! Day 5 of 8 days, 8 ingredients or less is here! This time we’re featuring Candy Cane Box Cake Cookies! I don’t know about you, but come the last week before Christmas, I’m kind of running around like a crazy lady, trying to get all those last minute things checked off my to do list before it’s officially time to relax. And when you get asked to bring a last minute dessert to a party, this is one of my go-tos. It’s easy, quick, and takes about 10 minutes tops to make. For those who don’t like measuring and baking, it’s all pretty much done for you. Simply dump in a box of pre-made cake mix, add two eggs, and a 1/4 cup of vegetable oil and bam! Cookies! These ones we ‘holiday-d’ up a little and added some peppermint extract, cream cheese icing, and some crushed candy canes. Yum! Now, I did this with vanilla cake mix but this would equally be delicious with chocolate cake mix. Or you could do a box of both! Easy, quick, and you can focus on getting all the other items done on your holiday check list! Now let’s get baking!
Ingredients:
- 1 – 15.25 oz box of vanilla cake mix (can use chocolate too!)
- 2 eggs
- 1/4 cup of vegetable oil
- 1 tsp peppermint extract
- 1/2 of a 16oz pre-made tub of cream cheese icing
- 2 candy canes crushed up (about 1/4 cup)
Instructions:
Preheat oven to 350°. In a large bowl mix together cake mix, 2 eggs, vegetable oil, and peppermint extract. Mix until smooth. Line a baking sheet with parchment paper, with a cookie scoop or a tablespoon, place even spoonfuls on baking sheet. Place in oven and cook for 8-10 minutes until tops begin to turn golden brown. Remove from oven and place on cooling rack. Once cool, ice each cookie and then sprinkle with crushed up candy canes. They’re now ready to eat and enjoy!
