Chocolate Dipped Clementines with Sea Salt – 8 Days, 8 Ingredients

It’s day 6 of our 8 days, 8 ingredients or less event!  We’re getting into the home stretch!  This recipe is super, duper simple!  Only THREE ingredients.  It’s also a really healthy dessert alternative and it’s super pretty on a holiday spread!  It’s great for food allergies and is gluten-free, keto, vegan/vegetarian, and can easily be adjusted to be dairy free (use dairy free chocolate).  This is one kids can definitely help with and snack on too!  You simply peel some clementines (mandarin oranges work too!), dip in melted chocolate, and sprinkle with a little sea salt!  It’s the perfect combo of sweet and salty.  Not to mention, this is the best time of year for citrus!  It’s when they’re the sweetest and cheapest that they’ll be all year! We like to keep these in the freezer and have them as a frozen treat.  They help curve that sweet tooth that is so hard to control over the holidays! This originally is not my idea, as a wedding photographer in my other studio (www.alyshayoderphoto.com), I’ve seen this more and more at weddings and thought, ‘how simple and delicious!’ and I wanted to share it with all of you!  Now let’s get some chocolate melted and some clementines peeled!

Ingredients:

  • 5-6 clementines (or mandarin oranges), peeled and separated into segments
  • 1 cup of semi-sweet chocolate chips, melted
  • 1 T of flaky sea salt or Himalayan salt (if you’re not a big salt person, skip this!)

Instructions:

On a large baking sheet, cover with a piece of wax paper (parchment works too!). Peel your clementines, remove any extra stringy parts or excess white peel left on back of segments.  Separate into segments. In a microwave safe bowl, heat chocolate for 30 second intervals, stirring between each 30 seconds, until chocolate is melted and smooth (about 1 and a half minutes). Carefully dip half of each clementine segment in chocolate and place on wax paper. Before chocolate begins to harden, sprinkle each piece with a little sea salt.  Once tray is full, place in fridge or freezer until chocolate has hardened.  Serve immediately, or place in a plastic bag in freezer for future snacking!  Enjoy!
