4-Ingredient Apple Barbecue Pulled Pork

Oh wow, I don’t think any of us on the Eastern part of the States was expecting this snow!  But here we are.  Roads closed, ice, and a whole lotta ‘I don’t want to be outside.’  I want to be curled up in front of a fire, with an adult hot chocolate, watching cheesy Hallmark movies.  And the last thing I want to be doing is making an elaborate dinner.  Welllll… have I got a recipe for you!  This one is seriously easy, delicious, and it makes the house smell ammaaazzing.  Best thing?  It only has FOUR ingredients! It’s also what I call the ‘clean out all those half filled bottles of bbq sauce you have taking up space in your fridge’ recipes lol.  This creates the perfect pulled pork without a million ingredients and can be served with a lot of different meals.  So enjoy that fireplace, watching the snow, and everyone will be wondering what the heck you’re cooking that smells so amazing!

Ingredients:

  • Around 2.5-3 lbs pork tenderloin (we get ours from Costco!)
  •  1 Granny Smith Apple, peeled and diced
  • 1 Vidalia onion, peeled and diced
  • 2 cups of your favorite bbq sauce (I mix whatever I have left in the fridge, mustard bbq and smokey are my go to)
  • Salt and pepper to taste

Instructions:

Preheat oven to 325°.  Removed pork tenderloin from package.  Salt and pepper pork.  In a 8×8 baking dish, spray dish with non-stick cooking spray, spread evenly half of chopped onions and half of chopped apples.  Top apples and onions with pork.  Cover with remaining half of apples and onions.  Pour barbecue sauce evenly over pork. Cover dish tightly with foil and place in oven for 4 hours.  Remove from oven, pork should be fork tender now.  Turn up oven to 400°. Shred pork with forks.  Place back in oven for 10 minutes (to get a little crispy and for the meat to absorb lots of that yummy apple, onion, and  bbq sauce).  Remove from oven and serve immediately!  Enjoy!
