I don’t know about all of you, but I am very well aware of the fact that National Tequila Day is today! It also is National Taco Day. Coincidence? I think not. Stay tuned though, there is a taco recipe on the horizon. Hint. It has sage and gruyere. Not your traditional taco but hey, I’m not your traditional lady 😉
This cocktail is for all your thyme lovers out there! And I know there are a lot of you, because many of you are my close friends! For all those who think the flavor of thyme is overwhelming, this might not be your recipe. But like many, I love the combination of thyme and citrus. Mix me up a cocktail based on those flavors… and I’m all about that! Especially with this gross humid heat. It just makes me want to put up my feet and sip on cold drinks all day long. Well, this is that cold cocktail that you can sip on all day long! It’s sweet, savory, sparkling, and just the right amount of tang from those lemons! Aside from making the simple syrup, this really is a mix up and serve. The simple syrup (if you strain it) lasts for a few weeks in the fridge too! So get out those deck chairs and some cocktail glasses and mix up this drink for National Tequila Day!
**Also, fun little tip, this is super easy to make with other citrus, you can even use the same easy thyme lemon simple syrup and substitute the lemonade for any citrus drink. I’ve also included a variation for grapefruit as well, but it can easily be done with limeade, orange juice, or any other fun citrus drinks!
Ingredients:
For Simple Syrup:
- 1 cup white granulated sugar
- 1 1/2 cups of water
- 5-15 springs of thyme (if you don’t want as much thyme flavor, use less thyme, and vice versa for more)
- 3 slices of lemon
For Pitcher of Spritzer:
- ½ cup of lemon thyme simple syrup
- 1 1/2 cups lemonade (or your favorite citrus drink, we used lemonade and grapefruit juice for the photos below!)
- 1-2 cups of your favorite tequila (add amount based on drink strength preference)
- 3 cups seltzer water
- Ice to fill your pitcher
- **Optional – slices of lemons and sprigs of thyme for garnish
Instructions:
For the simple syrup, combine sugar, water, thyme, and lemon slices in a medium pan. Place on high on the stove and stir continuously until boiling. Remove from heat, allow to steep, and cool to room temp. Once cooled, strain into container. For drinks, mix all ingredients (except garnishes) in pitcher. Fill glasses with ice, pour mixed drink, and garnish with lemons and thyme. Put your feet up and enjoy!
