Double Chocolate Guinness Brownies w/ Peanut Butter Icing

Happy Saint Patrick’s Day everyone!!  What a better way to celebrate than incorporating some Guinness in these delicious double chocolate brownies with peanut butter icing?  These brownies are dense, packed with chocolate flavor, and leave a great lingering taste of Guinness in your mouth.  A win win in my book!  And hey, don’t forget that killer peanut butter buttercream icing!  It only enhances the awesomeness of these brownies.  So grab your St. Paddy’s gear and bring a plate of these to your holiday parties.  You’re sure to be everyone’s new best friend!

**These are more ‘cakey’ brownies.  If you’d like them more chewy, only use two eggs instead of three and add 1/4 cup of vegetable oil!

Double Chocolate Guinness Brownies with Peanut Butter Icing

Want to up your brownies game a thousand percent?  Make these double chocolate Guinness brownies with peanut butter icing!  Great dessert for St. Patty's Day parties!

Ingredients

For the Brownies

  • 1 1/2 cups flour, sifted
  • 3/4 cup cocoa powder, sifted
  • 1/4 tsp baking soda
  • 2 sticks butter, melted
  • 3 large eggs
  • 1 cup white granulated sugar
  • 1 1/2 cup packed brown sugar
  • 1 tsp vanilla
  • 1 cup Guinness Stout Beer
  • 1 cup semi-sweet chocolate chips

For the Pb Icing

  • 1 1/2 sticks softened butter
  • 1/2 cup creamy peanut butter
  • 1 tsp vanilla
  • 5 tbsp milk
  • 4 cups powdered sugar

Instructions

  • Preheat the oven to 350°. Line a 13x9 pan with parchment paper.  In a bowl combine and sift flour, cocoa powder, salt, and baking soda.  In another bowl mix together butter, sugars, vanilla, and eggs. Beat in Guinness Beer (butter may start to separate but don't worry once you add the flour/cocoa mixture it will all blend well).  Slowly stir in and incorporate flour/cocoa mixture.  Mix everything until well combined.  Fold in chocolate chips.  Pour and spread evenly in parchment lined pan.  Place in oven and cook for about 30 minutes or until knife comes out cleanly from middle of brownies.  Remove from oven and allow to cool completely. 
  • To make the icing, in a large bowl combine butter and peanut butter.  Whisk until smooth.  Whisk in vanilla and milk until creamy.  Slowly stir in powdered sugar and whip until smooth and creamy.  Pour and spread evenly on top of cooled brownies.  Cut into squares, serve, and enjoy!
