Grilled Zucchini Boats w/ Green Goddess Avocado Dressing

So how many of you are about to have a surplus of zucchini in your gardens?  I mean come August 8th, it’s even National Sneak Some Zucchini onto Your Neighbor’s Porch Day!  Now pair all that zucchini with some summer grilling and all the fresh herbs of your garden and VOILA, pure awesomeness!  This green goddess dressing is seriously a stand alone recipe too, you can use it on anything!  Looking for a delicious salad dressing? Use it!  Looking for something yummy to drizzle over some grilled chicken? YES! This is even great to dip veggies in.

This really is a quick recipe to throw together, even though there are a lot of ingredients.  The dressing is simple – all thrown in the food processor and blended, the cous cous is the boxed variety with some fresh veggies mixed in, and the zucchini, while grilled, can easily be baked too!  Also, for a great salad the next day, chop up the leftover zucchini, mix with leftover cous cous, put over a bed of greens and drizzle with some dressing.  Delicious and healthy! So go get picking some herbs and zucchini and whip up this recipe!

Ingredients:

For Zucchini Boats:

  • 4 medium sized zucchinis, halved and seeds scooped out from the middle creating ‘boat’ for cous cous mixture
  • 1/3 cup of olive oil
  • 1 T garlic salt  (I prefer Lawry’s)
  • 1/2 t of pepper

For Cous Cous:

  • 1 – 5.8 oz box season cous cous flavor of your choice, cooked (I used garlic and olive oil, but lemon or sun-dried tomato work wonderfully too)
  • 1/2 cup of crumbled feta
  • 1/2 cup of diced cherry tomatoes
  • 1/4 cup of chopped red onion

For Green Goddess Dressing:

  • 1 cup greek yogurt
  • 1/2 cup of mayo
  • 1/4 cup of apple cider vinegar (can use red or white too!)
  • Juice of 2 lemons
  • 1 avocado, halved, peeled, and pit removed
  • 1/2 cup fresh parsley
  • 1/2 cup of fresh chives
  • 1/4 cup of fresh tarragon
  • 2 cloves of garlic
  • 1 tsp garlic pepper
  • Pinch of cayenne pepper (more if you like spice)
  • Salt and pepper to taste

Instructions:

Slice zucchini in half and scoop out the center seedy part.  Mix together olive oil, garlic salt, and pepper. Fire up the grill and place zucchini on grill and baste with olive oil mixture until zucchini has begun to get slightly soft and has grill marks on both sides.  Remove from grill.

Cook cous cous on stove according to box instructions.  Mix in feta, onions, and tomatoes. Once mixed well, fill zucchini boats with cous cous mixture.

Place all of the green goddess ingredients in food processor and blend until smooth.  Drizzle over zucchini boats and serve immediately. Enjoy! ** Tip: If you want to make it thinner to make dressing for salad, mix in milk.  If you’d like it thicker for dip, add more yogurt.
